Remove all of the seeds from the inside. Peel the skin and cut it into bite-sized cubes.<\/p>\n\n\n\n<p>Now take a cookie pan sheet and place the butternut squash pieces.<\/p>\n\n\n\n<p>Oil them up with some extra virgin olive oil and season it with salt. I prefer to cook quinoa in my instant pot.<\/p>\n\n\n\n<p>Take \u00bd quinoa, wash them, add them into IP inner pot, add 1 cup of water and salt. Lock the lid and set the steam valve to its sealing position.<\/p>\n\n\n\n<p>Select the Manual button and cook for 1 minute on high pressure. Allow the pressure release naturally. Once all the pressure released naturally, open the lid, fluff the quinoa with a fork and let it cools down.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-let-s-prepare-other-things\"><span style=\"color: #800000;\">Let&rsquo;s prepare other things &ndash;<\/span><\/h4>\n\n\n\n<p>Chop kale and onions and keep them aside.<\/p>\n\n\n\n<p>We will also use pecans and cranberries in this salad. you may substitute it with walnut or any nuts of your choice. Or if you want to make this salad nut-free, skip them.<\/p>\n\n\n\n<p>I love to use Paneer in this recipe. You may use Feta cheese or goat cheese too.<\/p>\n\n\n\n<p>If you would like to keep this meal vegan, sub out paneer for vegan cheese or you can completely skip the cheese part. Easy peasy.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-step-3-dressing\"><span style=\"color: #ff00ff;\">Step &ndash; 3 Dressing<\/span><\/h3>\n\n\n\n<p>Moving on to the best part of this whole salad&hellip;the dressing! because what is a salad without the dressing?<\/p>\n\n\n\n<p>So for this Roasted Butternut Squash Quinoa Salad, I have used my <a href=\"https:\/\/www.cookingcarnival.com\/balsamic-vinaigrette-dressing\/\">Balsamic Vinaigrette Dressing<\/a>. It is simple, delicious and very flavorful. You can also try this <a href=\"https:\/\/www.cookingcarnival.com\/pumpkin-vinaigrette\/\">Pumpkin Vinaigrette Dressing<\/a>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-step-4-mixing-all-the-ingredients\"><span style=\"color: #ff00ff;\">Step &ndash; 4 Mixing all the ingredients<\/span><\/h3>\n\n\n\n<p>Add Chopped kale, onion, butternut squash, quinoa, pecans, cranberries and paneer to a large mixing bowl.
