It is filled with Potato dumplings called gnocchi, and veggies all in a creamy, flavorful and comforting soup!<\/p>\n\n\n\n<p>This is one of the <strong>best soups<\/strong> on the planet! They are small dumplings made with potatoes and flour.<\/p>\n\n\n\n<p>Cooked potatoes are mashed and combined with flour to create a dough.<\/p>\n\n\n\n<p>Then it is formed into small pieces for boiling.<\/p>\n\n\n\n<p>These are a pasta alternative that transforms into melt-in-your-mouth, light, and fluffy pillows.<\/p>\n\n\n\n<p>We love gnocchi. My favorite way is, &nbsp;tossed with pesto or <a href=\"https:\/\/www.cookingcarnival.com\/instant-pot-marinara-sauce\/\">marinara sauce<\/a>!<\/p>\n\n\n\n<p>There are all kinds of gnocchi available in the market these days.<\/p>\n\n\n\n<p>The traditional one is, of course, potato gnocchi but you can even find cauliflower gnocchi at grocery stores now!<\/p>\n\n\n\n<p>While gnocchi can be made from scratch, they are widely available in stores fresh, frozen, or dried.<\/p>\n\n\n\n<p>I just buy the shelf-stable gnocchi that you can find in the pasta aisle in most major grocery stores.<\/p>\n\n\n\n<p>We can make may dish from the gnocchi. One way of using gnocchi is to make soup.<\/p>\n\n\n\n<p>The gnocchi cooks right in the soup and the starch released from the potatoes helps to thicken it up and makes the soup smooth and hearty.<\/p>\n\n\n\n<p>This gnocchi soup is creamy with the addition of heavy cream.<\/p>\n\n\n\n<p>I also add fresh thyme and Italian seasoning to flavor it up.<\/p>\n\n\n\n<p>This is one of those meals which you can quickly put together in your Instant Pot on <strong>busy weeknights<\/strong>.<\/p>\n\n\n\n<p>Gnocchi cooks very fast so I did cook this soup in <a href=\"https:\/\/amzn.to\/2t1QJA2\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Instant Pot<\/a> for 1 minute on high pressure with quick-release pressure. I don&rsquo;t like all gummy gnocchi.<\/p>\n\n\n\n<p>Cooking for 1 minute in instant pot, It actually retained its texture pretty well. Step by step process &ndash;<\/h2>\n\n\n\n<p>Press the saute button on the Instant Pot. Once it displays hot, add butter. (Photo 1)<\/p>\n\n\n\n<p>Then add the garlic, bay leaf, celery, onion, and saute for 2 minutes until onion is soft and translucent. DO NOT stir but press slightly so that gnocchi is underwater. (Photo 3 to 7)<\/p>\n\n\n\n<p>Close the lid. Turn off the IP from saute mode and Press the manual or pressure cook button and cook on high pressure for 1 minute with the pressure valve in the sealing position. You can add extra stock here if you want to thin out the soup further. The soup stays well in the freezer for a couple of months when stored in an air-tight container.<\/p>\n\n\n\n<p>For fridge &ndash; Store leftovers in the fridge in an air-tight container for 5-7 days. When reheating, you may need to add water as the gnocchi can soak up some of the broth while in the fridge.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-can-you-make-this-on-a-stovetop\"><span style=\"color: #ff00ff;\">Can you make this on a stovetop?<\/span><\/h3>\n\n\n\n<p>Sure you can.<\/p>\n\n\n\n<ul><li>Heat butter in a large pot over medium heat. Add garlic, bay leaf, onion, celery, and carrots and saut&eacute; until veggies are softened (approx. 10 minutes).<\/li><li>Add veggie broth, thyme, and seasoning to veggies. Bring to a boil.<\/li><li>Add gnocchi and simmer on low for 10 minutes, stirring occasionally<\/li><li>Now add spinach and heavy cream. Cook them for about 2 minutes and switch off the flame.<\/li><li>Taste to adjust seasonings.
