That too only homemade. We don&rsquo;t like restaurants enchilada much. Step by step process &ndash;<\/h2>\n\n\n\n<p>Turn on the saute button in an instant pot. Once it displays hot, add the oil to the pot.<\/p>\n\n\n\n<p>Now add garlic, onion and bell peppers, saute for a minute, you don&rsquo;t want them browned.<\/p>\n\n\n\n<p>Then add water to the pot. Red and green enchilada sauce &ndash; <\/strong><\/span><\/p>\n\n\n\n<p>The most important ingredient to make Instant pot enchilada rice is &ndash; use good enchilada sauce!<\/p>\n\n\n\n<p>Because the flavors and aroma really depend on the sauce.<\/p>\n\n\n\n<p>For this recipe, I have used store-bought sauce. My favorite brand is Old El Pasos green and red enchilada sauce (Not sponsored, just love them).<\/p>\n\n\n\n<p><span style=\"color: #800000;\"><strong>2. Rice &ndash;<\/strong><\/span> Choose long-grain white rice. I have used Basmati rice.<\/p>\n\n\n\n<p><strong><span style=\"color: #800000;\">3. Cheese<\/span> <\/strong>&ndash;&nbsp; You can use any cheese of your liking and feel free to add as much cheese as you like.<\/p>\n\n\n\n<p><strong><span style=\"color: #800000;\">4. Black beans<\/span><\/strong> &ndash; Make sure to drain the beans well if you are using the canned variety.<\/p>\n\n\n\n<p><strong><span style=\"color: #800000;\">5. Substitutes for white rice<\/span><\/strong> &ndash; You can cook this recipe with brown rice or quinoa too.<\/p>\n\n\n\n<ul><li><strong>For brown rice<\/strong> &ndash; Add one more cup of water and cook this for 22 minutes at high pressure with natural pressure release.<\/li><li><strong>For quinoa<\/strong> &ndash; just replace the rice with quinoa, everything else will remain the same.<\/li><\/ul>\n\n\n\n<p><strong><span style=\"color: #800000;\">6. This can be made vegan too &ndash;<\/span><\/strong>&nbsp;Skip the regular cheese at the end and use vegan cheese. Or simply skip the cheese. It will be still so good!<\/p>\n\n\n\n<p><strong><span style=\"color: #800000;\">7. This rice freezes well &ndash;<\/span><\/strong> I would not stir in the cheese at the end if I want to freeze it. Let the enchilada rice cool down, &nbsp;place in an individual portion in an airtight container and freeze them. They stay fresh up to a month.<\/p>\n\n\n\n<p>Thaw them at room temperature for about an hour or two and heat in the microwave or on the stovetop. Stir in cheese at the time of re-heating your portion.<\/p>\n\n\n\n<p><span style=\"color: #800000;\"><strong>8. Spice Level<\/strong><\/span> &ndash; This enchilada rice is medium spiced. To make it spicier, add more jalapenos, use hot enchilada sauce in place of the medium. Or to make it mild, skip the jalapenos and use mild enchilada sauce.<\/p>\n\n\n\n<p><strong><span style=\"color: #800000;\">9. Serving suggestions<\/span><\/strong> &ndash; Serve this with sour cream, tortilla chips, lime wedges, cilantro, and diced avocados. Or place in the middle of tortillas, add <a href=\"https:\/\/www.cookingcarnival.com\/homemade-salsa\/\">salsa<\/a>, sour cream, <a href=\"https:\/\/www.cookingcarnival.com\/roasted-corn-guacamole\/\">guacamole<\/a>, lettuce, and some more cheese, and make a <a href=\"https:\/\/www.cookingcarnival.com\/instant-pot-burrito-wrap\/\">burrito<\/a>. Yum!<\/p>\n\n\n\n<p><strong><span style=\"color: #800000;\">10. The texture of this rice &ndash; <\/span><\/strong>Unlike <a href=\"https:\/\/www.cookingcarnival.com\/arroz-verde-green-rice\/\">Mexican green rice(Arroz Verde)<\/a>, the rice granules in this enchilada rice recipe won&rsquo;t be separated.<\/p>\n\n\n\n<p>At the same time, they will be saucy and even more appetizing. The enchilada sauce blends in so well with the rice to make it juicier.<\/p>\n\n\n\n<p>In short, this recipe would make your game day celebration or even a simple meal come alive.<\/p>\n\n\n\n<p><strong><span style=\"color: #800000;\">11. Do Not stir<\/span><\/strong> &ndash; Once onion, garlic and bell peppers are saut&eacute;ed, add all ingredients one by one WITHOUT stirring.<\/p>\n\n\n\n<p><strong><span style=\"color: #800000;\">12. Stovetop version &ndash;<\/span><\/strong> To make this recipe on stovetop, follow instructions until sauteing the garlic, onion, and bell peppers on medium heat.<\/p>\n\n\n\n<p>Then add all ingredients &ndash; water, rice, black beans, corn, taco seasoning, salt, green, and red enchilada sauce, and stir.<\/p>\n\n\n\n<p>Cover the pot with a lid and cook on medium heat for 10 to 15 minutes or until the rice is done.<\/p>\n\n\n\n<p>Remove lid and add in the cilantro and cheese. Mix until the cheese melts. My favorite brand is Old El Pasos green and red enchilada sauce (Not sponsored, just love them).<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\"><strong><span style=\"color: #800000\">Rice &ndash;<\/span><\/strong> Choose long-grain white rice. I have used Basmati rice. <strong>Make sure to rinse the rice well with 2 to 3 waters and drain the excess water and keep it aside.<\/strong><\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\"><strong><span style=\"color: #800000\">Cheese &ndash;<\/span> <\/strong>You can use any cheese of your liking and feel free to add as much cheese as you like.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\"><strong><span style=\"color: #800000\">Black beans &ndash;<\/span><\/strong> Make sure to drain the beans well if you are using the canned variety.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\"><strong><span style=\"color: #800000\">White rice alternatives &ndash;<\/span><\/strong> You can cook this recipe with brown rice or quinoa too.<\/span><div class=\"wprm-spacer\"><\/div>\n<ul>\n<li><strong>For brown rice<\/strong> &ndash; Add one more cup of water and cook this for 22 minutes at high pressure with natural pressure release.<\/li>\n<li><strong>For quinoa<\/strong> &ndash; just replace the rice with quinoa, everything else will remain the same.<\/li>\n<\/ul>\n<span style=\"display: block;\"><strong><span style=\"color: #800000\">This can be made vegan too.<\/span><\/strong> Skip the regular cheese at the end and use vegan cheese. Or simply skip the cheese. It will be still so good!<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\"><strong><span style=\"color: #800000\">Freezes well.<\/span><\/strong> I would not stir in the cheese at the end if I want to freeze it. Let the enchilada rice cool down, place in an individual portion in an airtight container and freeze them. They stay fresh up to a month. Thaw them at room temperature for about an hour or two and heat in the microwave or on the stovetop. Stir in cheese at the time of re-heating your portion.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\"><strong><span style=\"color: #800000\">Spice Level &ndash;<\/span><\/strong> This enchilada rice is medium spiced. To make it spicier, add more jalapenos, use hot enchilada sauce in place of the medium. Or to make it mild, skip the jalapenos and use mild enchilada sauce.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\"><strong><span style=\"color: #800000\">Serving suggestions &ndash;<\/span><\/strong> Serve this with sour cream, tortilla chips, lime wedges, cilantro, and diced avocados. Or place in the middle of tortillas, add salsa, sour cream, guacamole, lettuce, and some more cheese, and make a burrito.
