It is made from the batter of Bengal gram (chana dal).<\/p>\n\n\n\n<p>The consistency is loose and It is often topped with butter, Sev, locho masala, cilantro, onion, etc.<\/p>\n\n\n\n<h2 id=\"what-is-the-story-behind-this-dish-history-of-locho\"   class=\"wp-block-heading\" >What is the story behind this dish? History of Locho &ndash;<\/h2>\n\n\n\n<p>In Gujarati, Locho means something is not right (fishy).<\/p>\n\n\n\n<p>It has its name from the fact that it was created while making Khaman. In the process of making khaman, it turned out like a lump (locho we call it in Gujarati) instead of getting pieces like Khaman!<\/p>\n\n\n\n<p>So The story behind it is something like this &ndash;<\/p>\n\n\n\n<p>Once a chef by mistake added more water to the <a href=\"https:\/\/www.cookingcarnival.com\/khaman-dhokla\/\">khaman dhokla<\/a> batter. So the better turned out very runny and that&rsquo;s why khaman also turned out a little softer and mushy than the regular one.<\/p>\n\n\n\n<p>So he said,&rdquo; <strong>arre aa to LOCHO thai gayo<\/strong>&rdquo; means It becomes lumpy and not right.<\/p>\n\n\n\n<p>To hide his mistake, he served that dish along with the tasty and colorful toppings like green chutney, sev, onion, masala, and butter.<\/p>\n\n\n\n<p>And this mistake is loved by his customers and this dish was born.<\/p>\n\n\n\n<p>This dish is super easy to make. Plus you can find all the ingredients at your pantry, local Indian grocery store, or on Amazon.<\/p>\n\n\n\n<p>The preparation is quite similar to Khaman, however, more water is added to the batter in this recipe. Make sure you cut onion very finely.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-sev\"><span style=\"color: #ff00ff;\">Sev<\/span><\/h3>\n\n\n\n<p>For sev, use the smaller\/finer version of sev, called nylon sev.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-butter\"><span style=\"color: #ff00ff;\">Butter<\/span><\/h3>\n\n\n\n<p>We use butter but you may use oil too. Peanut oil would taste great.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-locho-masalo\"><span style=\"color: #ff00ff;\">Locho masalo<\/span><\/h3>\n\n\n\n<p>This spice mix is easily available in India but not here In the US. So I make it in bulk and store it in my pantry. It stays fresh for up to 3 months.<\/p>\n\n\n\n<p>For this spice mix, you will need, Chili powder, Black salt, black pepper powder, and roasted cumin powder. Step by step process &ndash;<\/h2>\n\n\n\n<p>Wash both the dals very well and soak both together for 6 hours or overnight in water. (Photo 7 and 8)<\/p>\n\n\n\n<p>Once you are done with a soaking of dals and poha, drain all the water from dal and poha. (photo 9)<\/p>\n\n\n\n<p>Take everything into a blender. (Photo 10 and 11)<\/p>\n\n\n\n<p>Blend them into a smooth but little bit coarse paste using 1 and \u00bc cup of water. (Photo 12 and 13)<\/p>\n\n\n\n<p>Now take this batter into a bowl. Cover it and keep this batter to ferment in a warm place for about 6 to 8 hours. Mix well. (Photo 16 to 20)<\/p>\n\n\n\n<p>Slowly add 450 ml of water in the mixture and try to make a smooth batter from it. The batter should neither be too thin nor be too thick. Take a steel plate (I am using a 9-inch diameter plate) and grease it with some oil. (photo 22 and 23)<\/p>\n\n\n\n<p>After that add baking soda and lemon juice. Mix very well using a whisk. (photo 24 and 25)<\/p>\n\n\n\n<p>Pour \u2153 rd of the prepared batter in the greased plate neatly. (<strong>Note<\/strong> &ndash; Batter Quantity is depended on the size of the plate\/mould you are using). (Photo 26)<\/p>\n\n\n\n<p>Now, place the batter filled plate in the steamer carefully, cover the steamer with lid and let it cook for at least 10 minutes. Can we still make this recipe?<\/span><\/h3>\n\n\n\n<p>Absolutely, you can make without fermenting the batter.<\/p>\n\n\n\n<p>Add all the spices and water in the grounded batter. Take \u2153rd of the batter in a bowl.<\/p>\n\n\n\n<p>Add 1 teaspoon ENO fruit salt and 1 teaspoon lemon juice. Skip the baking soda here.<\/p>\n\n\n\n<p>Gently mix and steam the batter.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-can-we-use-besan-gram-flour\"><span style=\"color: #ff00ff;\">Can we use besan (gram flour)?<\/span><\/h3>\n\n\n\n<p>Honestly, I have never tried making locho with besan, so I don&rsquo;t know what the result will be.
