We mostly spent time at home watching tv and eating lots of treats. \ud83d\ude42<\/p>\n\n\n\n<p>Now, I am back with yet another easy and comforting <a href=\"https:\/\/www.cookingcarnival.com\/category\/instant-pot\/\">Instant pot recipe<\/a>.<\/p>\n\n\n\n<p>Every January, I try to cut refined sugar and refined flour from my diet, it&rsquo;s because I eat way too much sugar and unhealthy carbs in December.<\/p>\n\n\n\n<p>Who doesn&rsquo;t indulge too much in <a href=\"https:\/\/www.cookingcarnival.com\/category\/dessert\/\">Desserts<\/a>, <a href=\"https:\/\/www.cookingcarnival.com\/category\/eggless-baking\/\">cookies<\/a>, and whatnot during the holidays? We all do, right! Holidays are meant for Relaxing, parties and lots of food.<\/p>\n\n\n\n<p>But Holidays are over and It&rsquo;s now time to reset the body system.<\/p>\n\n\n\n<p><a href=\"https:\/\/www.cookingcarnival.com\/category\/soup-salad\/\">Soup, stews<\/a>, and salads are the best options to get back on track after too many merry nights.<\/p>\n\n\n\n<p>So today I am sharing our favorite stew recipe &ndash; African Peanut Stew made in Instant pot.<\/p>\n\n\n\n<p>If you&rsquo;re new to African Peanut Stew, I&rsquo;m so excited for you to try it!<\/p>\n\n\n\n<p>It&rsquo;s extremely easy to make and is packed full of healthy ingredients.<\/p>\n\n\n\n<p>I originally titled this soup &ldquo;African Peanut Stew.&rdquo; While it&rsquo;s inspired by West African peanut soups, it&rsquo;s not authentic by any stretch. I read that authentic recipes do not contain spinach, and they often contain meat.<\/p>\n\n\n\n<p>As a vegetarian, this recipe may be the closest to the authentic dish. Whether you&rsquo;re vegetarian, vegan, or follow any diet under the sun, I hope you love it, too!<\/p>\n\n\n\n<h2 id=\"why-i-love-this-stew\"   class=\"wp-block-heading\" >Why I love this stew?<\/h2>\n\n\n\n<p>It checks all the boxes &ndash;<\/p>\n\n\n\n<ul>\n<li>This stew is cozy and lovely.<\/li>\n\n\n\n<li>Creamy, satisfying texture and has extremely awesome flavor;<\/li>\n\n\n\n<li>It&rsquo;s vegan and super nutritious<\/li>\n\n\n\n<li>It has just the right balance of creaminess and kicks and it reminds me of another version of a good-for-you curry.<\/li>\n<\/ul>\n\n\n\n<p>You have no excuses. Yeah? Good news, because making this stew in an instant pot is the easiest method.<\/li>\n\n\n\n<li>Slow Cooker: also yes!<\/li>\n\n\n\n<li>Stovetop: yes! In almost the same amount of time! The exact ingredient amounts are in the printable recipe card at the bottom of this post.<\/p>\n\n\n\n<ul>\n<li><strong>Sweet potatoes<\/strong> &ndash; If you don&rsquo;t have sweet potatoes, you can use regular potatoes too.<\/li>\n\n\n\n<li><strong>Tomato paste<\/strong> &ndash; You can use fresh tomatoes, crushed tomatoes, or diced tomatoes too. IF you are substituting the paste, use 14 oz. of crushed or diced tomatoes.<\/li>\n\n\n\n<li><strong>Ginger, garlic, and Onions<\/strong> for the flavors ad aroma<\/li>\n\n\n\n<li><strong>Spinach<\/strong> &ndash; I love the flavor of the spinach in this Vegan Peanut Stew, but I&rsquo;ve seen versions using all sorts of different greens, so feel free to substitute with kale, collard green, mustard greens, or whatever hearty greens you prefer.<\/li>\n\n\n\n<li><strong>Peanut butter<\/strong> &ndash; Either chunky or smooth peanut butter will work here, but make sure it&rsquo;s a natural style, with no added sugar, to maximize the peanut flavor.<\/li>\n\n\n\n<li><strong>Oil<\/strong> &ndash; I have used peanut oil. Use whatever you have on hand.<\/li>\n\n\n\n<li><strong>Spicy kick<\/strong> &ndash; To give the spicy punch I have used Serrano peppers, cayenne peppers, and sriracha sauce. If you are not a spicy stew lover, you could just reduce or omit the Serrano peppers, cayenne peppers, and hot sauce altogether if you were worried about that.<\/li>\n\n\n\n<li><strong>Salt<\/strong><\/li>\n\n\n\n<li><strong>Liquid<\/strong> &ndash; I have used a combination of vegetable broth and water. You can use completely water or completely vegetable broth.<\/li>\n\n\n\n<li><strong>Peanut, cilantro, and lemon juice<\/strong> for garnishing &ndash; The peanuts give a great texture and crunch. Cover it. Add vegetable broth and Deglaze the pot. Stir to remove any brown bits. There should be nothing stuck to the bottom of the inner pot.<\/li>\n\n\n\n<li>Now add prepared peanut sauce on the top. Place the rice pot on top of it. (Skip this step if you don&rsquo;t want to do PIP).<\/li>\n\n\n\n<li>At this point, secure the lid on your Instant Pot, making sure the valve is set to sealing.<\/li>\n\n\n\n<li>Turn off the IP from serve this?<\/h2>\n\n\n\n<p>White basmati rice is my carbs of choice to go with this dish because it does not just taste delicious but also you can cook with the stew doing a pot in pot method in the instant pot.<\/p>\n\n\n\n<p>That being said, it can certainly be served with brown rice, <a href=\"https:\/\/www.cookingcarnival.com\/instant-pot-lemon-coconut-quinoa\/\">quinoa<\/a>, or without rice as well, or even with some <a href=\"https:\/\/www.cookingcarnival.com\/instant-pot-olive-oil-rosemary-no-knead-bread\/\">crusty bread<\/a> or with Indian flatbread like this <a href=\"https:\/\/www.cookingcarnival.com\/tandoori-roti\/\">tandoori roti<\/a> for dipping.<\/p>\n\n\n\n<h2 id=\"meal-prep-or-freezing-it\"   class=\"wp-block-heading\" >Meal prep or freezing it.<\/h2>\n\n\n\n<p>This recipe holds up well both in the refrigerator or freezer. I like to pack up this stew with rice and everything in an airtight container.
