I have used a 6-inch rice paper sheet. You can use medium or large rice paper sheets (adjust the amount of filling used accordingly). These are easily found in many supermarkets and Asian markets.<\/li><li><strong>Aromatic<\/strong> &ndash; I used a combination of grated ginger and grated garlic along with spring onion. Try to use fresh.<\/li><li><strong>Tofu <\/strong>&ndash; Use Firm tofu.<\/li><li><strong>Mushrooms<\/strong> &ndash; It has a nice umami flavor along with a meaty texture so they&rsquo;re great to add in the filling.<\/li><li><strong>Bell&nbsp;pepper and Carrots<\/strong> give a nice sweetness and color, just ensure you chop them finely so they cook quickly with the rest of the vegetables<\/li><li><strong>Cauliflower<\/strong> is also great as it goes with all vegetables and gives a little crunch.<\/li><li><strong>Garlic and Ginger<\/strong> brings a beautiful flavor to the filling<\/li><li><strong>Sesame oil, Soy sauce, and black pepper<\/strong> are used to flavor the filling. You don&rsquo;t need to add much as you will also have a dipping sauce. Use Tamari instead of soy sauce for a gluten-free version. Mix everything very well and keep it aside.<\/li><\/ul>\n\n\n\n<p><strong>Pre-prep work<\/strong><\/p>\n\n\n\n<ul><li>Open a tofu package, drain all the water and wash the tofu block with water. Wrap it in a kitchen napkin or paper towel; place a heavy pan on top and let stand for 15 minutes to press out the excess liquid.<\/li><li>Finely dice cauliflower, carrots, bell pepper, mushroom, green onions, and tofu.<\/li><li>Grated fresh ginger and garlic.<\/li><\/ul>\n\n\n\n<p><strong>Cook filling<\/strong><\/p>\n\n\n\n<ul><li>Heat oil in a wok or pan. Add ginger and garlic. Saute for a few seconds. Now add all the vegetables and saut&eacute; for 2 minutes. Add tofu, salt, pepper, and soy sauce. Mix and cook for a minute. (image 1 to 5)<\/li><li>Turn off the flame and let the filling cool down. (image 7)<\/li><li>Add a spoon of the filling mixture in the center of the sheet in a rectangle shape. (image 8)<\/li><li>Fold both the sides, and then starting from the top, fold over the rice paper sheet to cover the filling and roll it until the end. So you will be left with a square\/rectangle shape pocket. Refer below image or video for better understanding. (image 9 to 11)<\/li><li>Dip a second rice paper sheet in the cold water for 10 seconds, place it on the damp surface, and place the pocket in the middle. Wrap the pocket the same way by folding from the sides first and so on, to double wrap the filling. Place the prepared dumpling in a oil greased plate. You will be able to make 15 to 16 dumplings. Make sure to keep the gap between each dumpling. Add 1 teaspoon oil and pan-fry the dumplings on medium heat for a few minutes on each side until lightly golden, a few at a time. Don&rsquo;t overcrowd the pan. (image 15 and 16)<\/li><\/ul>\n\n\n\n<p><strong>Air fry the dumplings. (I am using Instant Pot Air-fryer lid)<\/strong><\/p>\n\n\n\n<ul><li>Grease the dumplings with oil from both sides. Place them in the air fryer basket. Cover the lid. Set the air fryer on 400 degrees F. for 14 minutes. Turn then halfway. Dip them in cold water for about 10 seconds. They continue to soften out of the water. Over soaking the rice papers will cause them to break when pan-frying them.<\/li><li>When wrapping the second layer, keep the folded side down so that the thickness of the skin is the same on both sides.<\/li><li>Don&rsquo;t over-crowd the pan or air fryer pot. Rice papers tend to &lsquo;stick&rsquo; when they touch each other so when pan-frying or air frying, do not let the edges of the dumplings touch one another or they may cause tearing.<\/li><li>Make sure to cut your vegetables and tofu in similar sizes so that they are mixed in well together and will cook evenly.<\/li><li>Don&rsquo;t overcook the filling as you don&rsquo;t want it to be soggy in the middle. You only want to cook them halfway.<\/li><li>When wrapping the rice paper dumplings, ensure on a wet or oiled working surface. This will prevent the sheets from sticking.<\/li><li>Rice paper sheets are quite delicate so be gentle when wrapping and handling them<\/li><li>Cover the dumplings with a slightly damp paper towel to keep the rice-wrapped dumplings from drying.<\/li><li>These dumplings taste the freshest and crispy when they are fresh out of the pan so enjoy them right away or they&rsquo;ll turn soft.<\/li><li>Don&rsquo;t overstuff the veggie dumplings.<\/li><li>To save time chopping, you can use a food processor.<\/li><\/ul>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1642629998452\"><strong class=\"schema-faq-question\">Can you prepare the rice paper dumplings in advance?<\/strong> <p class=\"schema-faq-answer\">You can prepare the filling in advance, however, the dumplings must be made and eaten fresh.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1642630010571\"><strong class=\"schema-faq-question\">Do you soak rice paper in cold or warm water?<\/strong> <p class=\"schema-faq-answer\">I prefer to soak the rice paper in a bowl of cold water for a few seconds. Warm or hot water will make the rice paper become too soft too fast and make it hard to fold.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1642630046436\"><strong class=\"schema-faq-question\">How to keep rice paper-wrapped dumplings from sticking?<\/strong> <p class=\"schema-faq-answer\">I keep the work surface slightly damp with water or apply some oil when wrapping the dumplings.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1642630058439\"><strong class=\"schema-faq-question\">Can you make it ahead of time?<\/strong> <p class=\"schema-faq-answer\">You can prepare the cooked filling 2-3 days in advance and store it covered in the refrigerator. The rice paper sheets must be prepared right before you eat.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1642630083325\"><strong class=\"schema-faq-question\">Can you freeze?<\/strong> <p class=\"schema-faq-answer\">I don&rsquo;t recommend it.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1642630098857\"><strong class=\"schema-faq-question\">What to serve with the rice paper dumplings?<\/strong> <p class=\"schema-faq-answer\">You can enjoy these dumplings either as an appetizer, side, or light lunch. So you will be left with a square\/rectangle shape pocket. Refer below image or video for better understanding.<\/div><\/li><li id=\"wprm-recipe-18430-step-3-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Dip a second rice paper sheet in the cold water for 10 seconds, place it on the damp surface, and place the pocket in the middle. Wrap the pocket the same way by folding from the sides first and so on, to double wrap the filling. Place the prepared dumpling in a oil greased plate.<\/div><\/li><li id=\"wprm-recipe-18430-step-3-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Repeat this process until all the filling has finished. You will be able to make 15 to 16 dumplings. Make sure to keep the gap between each dumplings. Otherwise it will stick to each other.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Pan-fry dumplings<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-18430-step-4-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Heat cast iron pan or nonstick pan. Add 1 teaspoon oil and pan-fry the dumplings on medium heat for a few minutes on each side until lightly golden, a few at a time. Place them in the air fryer basket. Cover the lid. Set the air fryer on 400 degrees F. for 14 minutes. Over soaking the rice papers will cause them to break when pan-frying them.<\/li>\n<li>When wrapping the second layer, keep the folded side down so that the thickness of the skin is the same on both sides.<\/li>\n<li>Don&rsquo;t over-crowd the pan or air fryer pot. Rice papers tend to &lsquo;stick&rsquo; when they touch each other so when pan-frying or air frying, do not let the edges of the dumplings touch one another or they may cause tearing.<\/li>\n<li>Make sure to cut your vegetables and tofu in similar sizes so that they are mixed in well together and will cook evenly.<\/li>\n<li>Don&rsquo;t overcook the filling as you don&rsquo;t want it to be soggy in the middle. You only want to cook them halfway.<\/li>\n<li>When wrapping the rice paper dumplings, ensure on a wet or oiled working surface. This will prevent the sheets from sticking.<\/li>\n<li>Rice paper sheets are quite delicate so be gentle when wrapping and handling them<\/li>\n<li>Cover the dumplings with a slightly damp paper towel to keep the rice-wrapped dumplings from drying.<\/li>\n<li>These dumplings taste the freshest and crispy when they are fresh out of the pan so enjoy them right away or they&rsquo;ll turn soft.<\/li>\n<li>Don&rsquo;t overstuff the veggie dumplings.<\/li>\n<li>To save time chopping, you can use a food processor.<\/li>\n<\/ul><\/div><\/div>\n<h3 class=\"wprm-recipe-header
