It is a quick one-pot meal.&nbsp;<\/p>\n\n\n\n<p>I had never eaten Thai food growing up in India. But when I came to the US, Thai curries became my favorite instantly.<\/p>\n\n\n\n<p>I love all thai curries &ndash; red curry, green curry, yellow curry, and panang curry. But out of all, Panang Curry has a special place in my heart.<\/p>\n\n\n\n<p>My version of Thai Panang Curry is vegetarian (vegan). It is healthy, as it is loaded with veggies &amp; tofu.<\/p>\n\n\n\n<p>It is a satisfying, easy weeknight meal. And the best part is that it takes less than 20 minutes to make this curry and have an exotic and rich meal at home.<\/p>\n\n\n\n<h2 id=\"what-is-panang-curry\"   class=\"has-text-align-center wp-block-heading\" ><strong>What is Panang Curry?<\/strong><\/h2>\n\n\n\n<p>Panang curry (also called phanaeng, phanang, panaeng, or panang in Thailand or Penang or Pulau Pinang in Malaysia) is a rich, creamy, thick Thai curry with a sweet, salty flavor.<\/p>\n\n\n\n<p>This curry has wonderful, bold flavors that tickle your taste buds.<\/p>\n\n\n\n<p>Panang curry comes from Thailand, from the island of Penang. This is one of the popular curries similar to red thai curry.<\/p>\n\n\n\n<p>It is generally served with a bowl of sticky rice.<\/p>\n\n\n\n<p>Typically Panang curry is made with meat &ndash; pork, beef, or chicken &ndash; cooked with the Panang paste, coconut milk, fish sauce, kaffir lime leaves, and basil leaves.<\/p>\n\n\n\n<p>However, I am sharing a vegan version of Panang curry made with firm tofu and colorful vegetables.<\/p>\n\n\n\n<h2 id=\"which-thai-panang-curry-paste-to-use\"   class=\"has-text-align-center wp-block-heading\"><strong>Which Thai Panang Curry Paste to use?<\/strong><\/h2>\n\n\n\n<p>I recommend making a homemade paste at least once! You may be surprised by how easy it is, and the taste is incredible.<\/p>\n\n\n\n<p>I have used <a href=\"https:\/\/www.cookingcarnival.com\/panang-curry-paste\/\">homemade paste<\/a>, but if you&rsquo;re pressed on time and want to use a shop-bought paste, check the ingredients carefully. Many Thai curry pastes aren&rsquo;t vegan because they contain shrimp paste.<\/p>\n\n\n\n<p>I love <a href=\"https:\/\/amzn.to\/43xusX9\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Maesri paste<\/a> from the Asian market. It is also available on Amazon. This one has the beautiful authentic flavors you get at Thai restaurants.<\/p>\n\n\n\n<p>This paste is vegan and gluten-free. However, most of the other Thai curry pastes contain shrimp. So if you are a vegetarian, always check the ingredients.<\/p>\n\n\n\n<h2 id=\"why-do-i-love-this-panang-curry\"   class=\"has-text-align-center wp-block-heading\"><strong>Why Do I love this Panang curry?<\/strong><\/h2>\n\n\n\n<ul><li>You&rsquo;ll need less than 30 minutes and just a handful of essential ingredients.<\/li><li>It is Delicious, Cozy, and all made in one-pot<\/li><li>It is packed with so many flavors!<\/li><li>It makes a hearty and comforting meal<\/li><li>It is Simple to make, vegan, and gluten-free.<\/li><li>Easily customizable with your favorite vegetables<\/li><li>It tastes even better the next day!<\/li><li>It is perfect for meal prep and budget-friendly, making it a winning dish.<\/li><\/ul>\n\n\n\n<h2 id=\"ingredients-required\"   class=\"has-text-align-center wp-block-heading\"><strong>Ingredients required<\/strong><\/h2>\n\n\n\n<p>Below is the ingredients list and possible substitutions. The exact ingredient amounts are in the printable recipe card at the bottom of this post.<\/p>\n\n\n\n<ul><li>Tofu &ndash; A great meatless option for this Panang Curry recipe. Buy the extra-firm variety for this recipe.<\/li><li>Vegetables &ndash; vegetables bring color and texture to the dish. I have added Red Bell Pepper, carrots, and onions. Feel free to use your choice of veggie.<\/li><li>Garlic &ndash;Make sure you use Freshly chopped garlic for flavor and aroma to the curry<\/li><li><a href=\"https:\/\/www.cookingcarnival.com\/panang-curry-paste\/\">Panang red curry paste<\/a> &ndash; Hero of this recipe. Try to use homemade. Or check your local Asian market. My favorite brand is Maesri which is also available on Amazon. Add more or less to taste.<\/li><li>Peanut Butter: A natural smooth peanut butter is perfect in this curry. My panang curry paste contains peanuts. However, if you use store-bought and do not contain peanut butter, use the double amount mentioned in the recipe.<\/li><li>Kaffir lime leaves &ndash; To provide a very distinct Thai herbal flavor. These can be hard to find sometimes. I found it at the Asian store. So if you don&rsquo;t find them, you can order them from Amazon. Or you can substitute it with lime zest.<\/li><li>Coconut milk &ndash; To create a creamy sauce. Buy the thickest variety you can find. I love Chakoh brand coconut milk.<\/li><li>Soy sauce: This replaces the fish sauce that the authentic recipe calls. It adds saltiness and aromatic quality. Use Tamari for a gluten-free option.<\/li><li>Thai basil leaves &ndash; To add freshness at the end. Keep it aside.<\/li><\/ul>\n\n\n\n<p><strong>Step &ndash; 2 Cooking curry on a stovetop.<\/strong><\/p>\n\n\n\n<ul><li>Heat oil in a heavy bottom pot. (image 1)<\/li><li>Now add garlic and panang curry paste. Saute for a minute or until you see oil separating from the curry paste, stirring continuously on medium to low heat. (image 2 to 4)<\/li><li>Now add coconut milk. Mix everything well and deglaze the pot. Mix everything very well. Torn the Kaffir lime leaves and add them to the curry.&nbsp;(image 7 to 11)<\/li><li>Cover the pot and let the curry cook for 8 to 10 minutes on medium to low heat. Mix well and cook it for 1 minute.<\/li><li>Vegan Panang Curry with vegetables and tofu is ready to enjoy. Switch off the flame and take out all the Kaffir lime leaves from the curry.<\/li><li>Note: Kaffir Lime leaves can be eaten from the curry, but I prefer to take them out. It turns tough after cooking.<\/li><li>Pro-tip: Taste and adjust the seasoning before serving. As with most recipes, seasoning comes down to personal preference. Broccoli, zucchini, and potatoes work well.<\/li><li>Feel free to add baked or fried tofu.<\/li><li>Peanut Butter Can be substituted with almond butter if needed, but I prefer peanut butter for authentic flavors.<\/li><li>Veggies: Carrot can be omitted or subbed with sweet potato or squash.<\/li><\/ul>\n\n\n\n<h2 id=\"pro-tips-notes-and-quick-faqs\"   class=\"has-text-align-center wp-block-heading\"><strong>Pro-Tips, notes, and quick FAQs<\/strong><\/h2>\n\n\n\n<ul><li>Some store-bought curry pastes can be hot, so add just three tablespoons first and increase as needed.<\/li><li>Sometimes coconut milk curdles, or oil separates from the milk. If that&rsquo;s the case, don&rsquo;t worry, it&rsquo;s fine. Due to the heat, the fat from the milk gets separated. Make sure to cook the curry on medium to low flame.<\/li><li>To save time, while cooking the curry, put the jasmine rice to cook.<\/li><li>You can also serve thai tofu curry with quinoa or brown rice.<\/li><li>Refrain from substituting thai basil with regular basil.<\/li><li>This curry gets thicker as it cools. Add &frac12; cup water to get a thinner consistency.<\/li><li>Kaffir Lime leaves can be eaten from the curry, but I prefer to take them out. This is because it turns tough after cooking.<\/li><li>A crucial step to making an excellent panang curry with great taste is frying curry paste in oil. Fry until you see the oil separates from the curry paste.<\/li><\/ul>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1681356516254\"><strong class=\"schema-faq-question\">How is Panang curry different than red curry?<\/strong> <p class=\"schema-faq-answer\">Panang curry contains ground peanuts which the typical red curry does not have. Panang curry is also a bit sweeter and milder than other thai curries.<br>Kaffir Lime Leaves have bold flavors. Crush leaves before adding them to the curry. Crushing kaffir lime leaves releases all its aromatic oil into the curry.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1681356528852\"><strong class=\"schema-faq-question\">Can I freeze it?<\/strong> <p class=\"schema-faq-answer\">Yes! This recipe freezes very well.<br>As I am all for meal prepping to make your life easier, I suggest making a few extra servings of this tasty Thai peanut curry.<br>Make sure to cool it completely before transferring it to freezer-safe containers.
